Cinnamon Chip Scones Recipe
The cinnamon chips are hard to find in local stores so you may have to order them online. Sorry, they won't ship them during the warmer months because you tend to get a gooey mess upon arrival!

Ingredients:
2 Cups Flour
2 Teaspoons Baking Powder
½ Teaspoon Baking Soda
½ Teaspoon Salt
2 Tablespoons Sugar
½ Cup Butter
1 Cup Cinnamon Baking Chips
1 Egg separated
1 Teaspoon Vanilla
¾ Cup Buttermilk
Cinnamon Sugar
Preheat Oven 375 degrees
Directions:
1. Combine flour, baking powder, baking soda, salt and sugar in mixing bowl.

Cut in Butter

Stir in Cinnamon Chips

In separate bowl, combine egg yolk, vanilla and buttermilk. Add to dry ingredients, mixing by hand completely.
5.
On a floured surface roll out dough by hand into ½ inch thickness
6.
Cut into scones with 3 inch cookie cutter and place on ungreased cookie sheet.
7.
Brush egg white over scones and sprinkle cinnamon sugar over scones.
8.
Bake 18-22 min.
9.
Cool scones a couple of minutes before serving.
Makes 10 – 12 scones

Mexican Eggs Ole Recipe
This is a great dish if you are making breakfast or brunch for a large group. We like to make it with diced ham for a more complete breakfast dish.
Serves 10
Ingredients:
16 oz. Cottage Cheese
1 Cup Milk
8 Eggs
½ Cup Butter, melted
6-7 Drops Tabasco
1 Cup Bisquick
2 Cups Shredded Cheddar Cheese
11 oz. Can Mexican Corn, drained
Salt
Pepper
Onion Powder
Preheat oven to 350 degrees
Directions:
- Mix Cottage Cheese and Milk together in a blender and set aside
- Combine all other ingredients in a large bowl
- Add Cottage Cheese mixture and stir well
- Pour into 9x11 Greased baking dish
- Bake at 350 degrees for 50-55 minutes or until light golden brown
- Serve with Sour Cream and Salsa on the side
Could add Bacon or Ham (may need to cut back on salt) |
