Spring is my favorite time of the year, here in the mountains of Western North Carolina. It's as if a sleeping giant comes to life filling the air with sweet freshness. It is a time of rebirth, a time of awakening, a time to start life anew. From the antics of the playful baby squirrels to the re-emergence of the chipmonks after a long winter's nap, you'll never cease to be entertained just looking out the window during our three-course, gourmet breakfasts.
